Cold French Summer Soup

This little cold soup is perfect for summer. It's filling, refreshing and super nutritious.
Its quick and easy to make & obviously vegan.

Ingredients:
1 big beet root
3 medium tomatos
2 shallots
2 cloves of garlic
Half can of coconut milk
1/2 cup of water
2-3 tbsp olive oil
2 teaspoons of vegetable bullion
Cumin to taste
Salt & pepper
Pumpkin seeds (optional)

Wash the beet and chop it into smaller chunks and cover with water in a sauce pan.
Bring the water to boil and then cook over medium temperate up to an hour.
Then drain and put aside.
Clean sauce pan and heat the olive oil in it.
Chop the shallots and the garlic and soften them over moderate heat.
Then add the beet and the tomato, the salt and the pepper & the vegetable buillion and cook it until the tomatoes are soft.
Then add the coconut milk and the 1/2 cup of water and bring to boil and then let it simmer for about 10 minutes.
Add the cumin and blend the whole thing.
Then let it cool down for a couple of hours or overnight in the fridge et voila.
I topped it with some more black pepper and pumpkin seeds but thats optional.
