Mediterranean Gazpacho

So I'm in Spain, it's hot out and its lunch time!
What better way to refresh yourself mediterranean style than with a traditional gazpacho? Basically a blended up salad if you're new to this.
Here it goes:

2-3 really ripe tomatoes 
1/2 peeled cucumber
1/2 medium white onion
1/4 of a green bell pepper
1 clove of garlic 
1-2 tbsp of extra Virgin olive oil
1 tbsp of red wine vinegar
Sea Salt & black pepper (preferably freshly grinder)
Thyme to taste

Easy: Blend it all up and top it with some thyme if you like. 
For me thyme is the symbol of Mediterranean summers. Maybe its the aspect of nostalgia it has for me, reminding me of all the summers I spent in Greece when I was little. The smell of dried thyme just brings me right back to Kreta. But this recipe is true & spanish,
