Thai summer

Juicy, hot summer salad. Explosion of the senses. This one is definitely an experience, and so simple too. I made some for my roommate and she loved it, so if you like thai food, this is definitely something you should try.

1/2 cup of cooked orange lentils
1/2 skinned zucchini squash
1/2 fresh mango
1/2 cup of canned coconut milk 
1 tbsp nori flakes
1 tbsp of sesame oil
Cilantro to taste ( I put a lot, just because I love the taste)
Cayenne pepper & Turmeric to taste
Edible flowers (optional)

Start by taking a medium sized frying pan over medium heat and lightly frying the zucchini in sesame oil. Add the coconut milk and the nori flakes. Cut the mango into cubes and add them into the pan along side the lentils.
Then add the fresh cilantro last.
Add as much cayenne pepper as you can handle and decorate the plate with edible flowers.
