Beetroot Hummus


 I admit that I have been eating a lot of hummus, but I think it's a great way to get protein as a vegan and at the same time get your daily vegetables in. They say you need 4 servings of vegetables a day and 1 serving is 1 cup, or 2 (!) for lettuce.
With it being summer and all I wanted to find a lighter alternative to the traditional hummus that I have been living on.
This is what I came up with:

Ingredients:
1 medium cooked and drained beetroot
1/2 cup chick peas
2 tsp tahini 
juice of half a lemon
1/2 clove of garlic
1-2 tsp pumpkin seed oil (or olive oil)
dash cumin
salt and pepper to taste

Blend it up bitches
