Hummusified Quinoa

I love this because its super filling & I am not gonna lie I was trying to use up random shit that I had around my kitchen.

1/2 cup of Quinoa
2 tbsp of Hummus (see recipe: http://mindfoodblog.blogspot.com.es/2014/06/hummus.html)
1 cup of spinach
1 small red onion
1 mini egg plant (it was super tiny)
1/3 of a courgette/zucchini
1 tsp olive oil
1 tbsp soy sauce
dash cumin
salt pepper

Cook the Quinoa with 2 parts of water for every 1 part of Quinoa, but keep an eye on it.
Bring to boil and then cook over medium low temperature for about 15-20 minutes.
Chop the zucchini, the egg plant and the red onion and cook in a medium frying pan, in the olive oil.
If you feel like you need more oil you can start adding the soy sauce to save some calories or just take another spoon of oil if you're feeling yolo (also you might want to use coconut oil if you are really careful with that kind of stuff because its more resistant to higher temperatures).
Drain the Quinoa and add to the pan with the vegetables and then add the fresh spinach.
Finally take of the stove and add the 2 tbsp of hummus and the spices.
Top with some fresh spinach and drizzle with pumpkin seed oil.

Tip: Add a tbsp of raisins to the Quinoa, it makes it taste delicious and sweet. Also Ayurveda states that you should have all the different flavors in every meal you eat. So raisins give you the sweet and maybe add some fresh lemon juice for the sour.
