Quinoa Summer Salad

This is so refreshing for summer, it cools you down and fills you up AND it's loaded with vitamins.
I actually had 2 plates of this because it's so low in calories and I got all the servings of veggies I needed for that day, so here we go.

1/2 cup of quinoa
1/2 zucchini 
5-10 cherry tomatos
1 green pepper
1 cup mixed greens 
1 cup romaine lettuce
1/2 cup carrot & red cabbage strips
1/4 cup chickpeas
1/4 cup chopped celery 
2 tbsp sweetcorn 

2 tbsp of lemon juice
1 tsp of Dijon mustard
1 tsp of honey
1-2 tsp of pumpkin seed oil (or olive) 
salt & pepper

Cook the Quinoa as instructed and chop all your vegetables.
Take your sauce pan with the Quinoa of the stove and wait till it's only slightly warm.
Then put all your veggies, tomatoes & the chickpeas into the pot and mix it with the dressing.
The slight heat will infuse the Quinoa with the vegetables and bring out their flavor just a bit more.
Then leave the entire thing in the fridge for a couple of hours until its ice cold and refreshing.
