Favorite Salad


So there is this amazing Saturday farmers market disguised as a flea market between York & 1st around 67th Street. I've never been a huge cucumber fan BUT the persian cucumbers you get there are out of this world, as well as the tomatoes and pretty much everything else. It's magical. It's like being back in Spain. The quality is ridiculously amazing, which is why you hardly need to do much with the food to make it taste exciting. I love this simple recipe because it allows me to just savor the natural flavor of the fruit (because cucumbers & tomatoes have seeds they are considered fruit). My Dad made me this all the time, and it's so simple and quick. Very similar to one of my favorite recipes: Tabouleh.

2 organic Persian cucumbers
2 big organic tomatoes
1/2 bunch of fresh Parsley
2 tablespoons apple cider vinegar
1-2 tablespoons olive oil
Salt & pepper

Wash all your fresh produce and mix all the ingredients for the dressing.
Then cut of the greater part of the Parsleys stems and chop the rest.
Grate the persian cucumbers into thin slices using the bigger blade of a cheese grater or just slicing it thinly with a sharp knife.
Dice the tomatoes and mix it all together in a big bowl, stir in the dressing.
