Happy Halloween Black Bean Veggie Quinoa on Green


It's the pumpkin holiday. And yes, its a holiday according to my roommate who is obsessed.
We are also running out of groceries, once more, but that didn't stop be from creating this beautiful ultra nutritious and very very spooky dish.

1/2 cup dry Quinoa
1/3 cup black beans
1 purple carrot (or any other color, but mine was purple with a yellow core and I almost started crying)
1 small organic sweet potato
2 tbsp pumpkin puree
1 tbsp walnuts
2 tbsp dried cranberries
1 tsp pumpkin seed oil
fennel powder
Sea Salt
black pepper
Nutritional yeast
Mixed Organic Greens to top it off

So, you cook the Quinoa in a pot with about 1-2 cups of water.
In a smaller pan you can steam the sweet potato and carrot. I have a Chinese bamboo steamer which I HIGHLY recommend. It's amazing I've been using it almost everyday for three years (I've gone through like 3 because I use them so often that they fall apart).
Once the Quinoa is done you add the chopped, steamed sweet potato and carrots to the pot along with the black beans and the pumpkin puree and pumpkin seed oil.
Then you take it from the stove and add the walnuts, cranberries and just a dash of all the other spices.
Then you place it on a pretty plate and top it off with greens and a drizzle of agave.
