Kale dried fruit & nut salad with agave dijon

This recipe is on of my favorite salads. I mean, I am obsessed with salads, so I say this about all of them, but this once is especially addictive. Really filling and great for fall, because you could cook the kale and eat it warm if you wanted to.

Ingredients:
4 cups of raw organic kale
1/4 cup of brown steamed lentils (Trader Joe's)
1/4 cup of walnuts
1/3 cup of Tabbouleh salad - this is the recipe http://mindfoodblog.blogspot.com/2014/10/quinoa-tabbouleh.html but you can get it store bought if you're feeling lazy
1 tsp hemp-seeds
2 prunes

Dressing:
1 tsp ground Dijon mustard
1 tsp agave
1 tsp of hummus
1 tbsp apple cider
2 tsp olive oil
sea salt
black ground pepper
a dash of cumin

I hope you enjoy it as much as I did,

J x
