Pink Chard Rice

My roommate bought pink chard thinking it was kale and so we didn't really know what to do with it.
Im not a huge fan of chard because, in my opinion, it doesn't taste good raw and I prefer to eat my greens raw whenever I can, since I prefer the taste and due to the fact that most of the vegetables vitamins are destroyed with heat. This actually turned out really nicely though, and it's nice to include as many varieties of greens into your diet as you can since they all have different sets of nutrients.

1 cup Trader Joe's Brown Rice Medley- I like to make brown rice in Bulk because it takes ages to cook
4 cups of Chard leaves
About 1 cup of the cubed stems (whatever you are left with)
1/2 medium white onion
1-2 cloves of garlic
1-2 teaspoons olive oil
Coconut oil
Black Pepper

Cook the Brown Rice Medley as instructed using Coconut oil instead of Butter (bring to a boil, simmer for 45-60 minutes).
Wash & dry the Chard and separate the stems from the leaves. Cube the Stems and cook them in some coconut oil in a big pan over medium heat. Chop the onion into small cubes and add it into the pan.
Chop the leaves and add them once the stems and the onions are almost done, along with the thinly sliced garlic. Mix in the cooked Rice Medley and add salt & black pepper to taste as well as 2 teaspoons of Mediterranean Virgin olive oil.

This is really great to take to school, as you can see thats what I did.
