Eggplant Pesto Quinoa

So this is a really simple, easy and tasty recipe, perfect for a School Lunch. Nothing more said.

1/3 cup Quinoa
1/2 Eggplant
1/2 Red Bell pepper
1 tbsp hummus
2 strands of fresh Thyme
1 tsp Vegan Pesto (will post recipe very, very soon, my roommate loves it)
1 tbsp olive oil

You cook the Quinoa in 2/3 cup of Water and then add in the pesto once cooked. Put a lid on the sauce pan so the power grain gets infused with it.
Preheat the oven to 350 F and dice the Eggplant and Bell pepper.
Put a baking sheet on a baking pan, add the Thyme & drizzle with olive oil.
Bake for about 1 hour, or until golden brown and done.
Then mix in with the Pesto Quinoa and serve with a tbsp of Hummus (link recipe) & some fresh Thyme.
