Little Italy




Hey babies,
Long time no talk. I have been occupied with graduating.
I don't know if I ever mentioned it but I have spent my last 2 years at acting school in New York. Well, I have a month left and I cannot believe how quickly it went by. Just kidding, it felt like solid 2 years but I thought I had to throw that in somewhere. I am really happy with the education I got and I don't really have any intention to continue school somewhere else and get a degree. I know I was born to be an artist of some sorts and I think it's time for me to let go of the boundaries I set myself under the stage name ambition and get out into the the big big world.

So the recipe. I give pasta too little credit in my "favorite foods list". Since I strayed away from traditional eating it's been hard because lets face it, real wheat pasta (angel hair being my personal favorite) beats all the pseudo pasta brands out there any day. The thing with real Pasta is just that I feel like shit after like 3 bites. I feel tired and frankly pretty damn stuffed. It's a heavy food. I have come to the conclusion that it's what you put in it, and how you prepare it. This dish right here ^ Was HEAVEN. So I will get into that now.

Ingredients:
1/2 package of Quinoa Pasta
1 Big Vine Ripe Tomato

1/2 cup of chopped Kale/Spinach/Basil (add basil last if thats what you pick, I used Kale) 
2 cloves of Garlic
2 tbsp of nutritional yeast 
1 tbsp of Marinara Sauce
1-2 tbsp Olive Oil
Salt & pepper to taste

The other kind was just mixed with a Kale Walnut Pesto that I picked up from the Union Square Farmers Market.


Preparation:
Cook the Quinoa Pasta as the Instructions say, rinse and put them aside.
Heat a pan and pour 1 tbsp of Olive Oil in there. Chop the tomato into small pieces and pour them in the pan. Add the Kale and slice the garlic.
Add the marinara if it starts to stick to the pan.

Pour the Pasta in and add the nutritional Yeast, the Salt and the pepper and mix it all up. We want the Pasta to be lightly fried.
Serve it on a plate and drizzle 1 tbsp of Olive Oil over it.
