Gourmet wrap with everything I love




This wrap was amazing. I still have tears of joy in my eyes thinking about the latest creation of mine. I have been procrastinating on this post so much, because I wanted it to be perfect and do it justice. I also took a shit ton of photos whilst making this because every step of the way looked beautiful. Everything I used is naturally beautiful. Natural beauty created by the earth. Colors and shapes and patterns created by this planet. I hope you like the recent development of me taking more photos of the finished product as well as throughout the process of making it. Like my dad likes to say: "The journey is the goal". Lets start this, shall we?

Ingredients
1 Artichoke 
1 cup radicchio lettuce
1/4 of an avocado
3 strips yellow bell pepper
1 fresh fig
1/4 cup of pea shoot sprouts
1 tbsp hummus
1 tsp hummus
2 tbsp balsamic vinegar
1 tbsp olive oil
1 tsp black sesame
1/2 lemon (juice)
About 6 almonds



 Start off by preheating the oven to 350 degrees and cutting the artichoke into 8 little wedges as so:



Add Himalayan Sea Salt & Ground Black Pepper & carefully drizzle the olive oil over them and stick them in the oven for about 30-40 minutes (keep checking them though, cause it depends on the oven).


Once they are done they should look like I quote my friend "a pile of dead birds".


Now we cut out their hearts. Pretty aggressive for a Vegan recipe tbh... This is quite a lot of work, but it is SO worth it. You simply cannot compare the canned artichoke hearts with this gourmet treat. You just can't. The end product should look somewhat like this:


 Once that is done you can take your whole-grain wrap (I wish I found a GF one that didn't fall apart. PLEASE comment if you know any good brown rice ones), and toast it in the oven for about 5-10 minutes. This is the kind I used ⬇


Once it is nice and warm you can get out all the other ingredients.
The first thing we do is spread hummus all over it and sprinkle it with black sesame.




  Then we can add our radicchio. Yeah, thats my hand...



 Followed by our sprouts, avocado (note the perfect avocado on the left, so dreamy), artichoke hearts, fig and almonds, which you can roast in tamari beforehand if you would like.

Now we mix the dressing with: 2 tbsp Balsamic vinegar, 1 tsp nutritional yeast & 1 tsp hummus. Then salt, pepper & cumin. 




Then roll it up & cut it in half. This is love in a wrap and you need to try it out!
