Ice Cream For Breakfast

 With summer quickly approaching I like to do nothing more than toss aside that warm breakfast oatmeal and start the day with something cool and refreshing. I love when people are like "eating healthy is boring" or "vegans only eat grass, because it couldn't be further from the truth.
Not only does eating healthy bring countless possibilities with it, but it also allows you to eat more whole some alternatives of your favorite foods at any time of the day, and you will not crash or go hungry. I promise!
This is banana Nice-cream, as we like to call it in the community and it's packed with super foods so you can start your day energized and happy. 

All you have to do is blend up a frozen banana and some mango in this case, although you can use any fruit you like for the base & then decorate it with your favorite toppings.
I chose dried banana chips, goji berries and chia seeds.

Goji berries are high in vitamin C and fiber & a great source of iron and vitamin A.

Dried banana chips add a little crunch without having to use grains, which makes this a paleo breakfast option too. 
Bananas are also high in fiber, iron and potassium.

Chia seeds were used by the Aztecs and Mayans back in the day prized for their ability to provide sustainable energy. 
"Chia" actually is an ancient Mayan word for "strength"
They are loaded with antioxidants, fiber, protein, Omega-3 Fatty Acids & they are high in many minerals including calcium, manganese, magnesium and phosphorus. 

You can really pick any toppings you like.
