Little Italy II Quinoa Pasta & Shrooms

 Hey everyone,
I was super delighted today when I logged into my blogger account and saw that the amount of people reading my blog on a regular basis has significantly increased. So thank you all for that!

Just letting everybody know that it is possible to comment on my posts, even if you do not have a blogger account. I really want to start creating a community and a stream of conversation between like-minded individuals. Mindfood does have its own Facebook page @Mindfoodist, and an Instagram Account under that same name. I would love to get to know the people behind the computers, and I am also completely open to constructive criticism and wishes for anything you would like me to cover both recipe wise and real life issues, related or unrelated to Veganism & Health. I also have a Twitter @Mindfoodist and I encourage you (on Twitter or Insta) to take photos of any meals that were inspired by or @Mindfoodist, tag me and #mindfoodism. Like I always say, being a Mindfoodist goes beyond Veganism. Its actively paying attention to what you are eating, putting love into your recipes, smiling in the kitchen, using ingredients from good ethical and possibly organic sources, maybe even harvesting your own stuff. Mindfoodism is all about maximizing the positive energy in your food and minimizing the environmental impact, as well as any damage it can do your body and mind. It is about creating habits that allow you to expand your mind spiritually. That being said I hope you keep enjoying my posts & recipes. I love you all.


A handful of Trader Joe's Brown Rice Quinoa Pasta (or any Pasta really)
1/2 big tomato
4 Mushrooms
1 clove of garlic
1/2 teaspoon Olive Oil or 1 tbsp marinara sauce
As many fresh Basil leaves as you care for
Himalayan Salt
Black Ground Pepper

Boil the Pasta as instructed.
Cut the tomato into squares & the mushrooms into little trees.
Roast the mushrooms in some Olive or marinara sauce and once they are starting to brown add the tomato. Lastly the garlic.
Add the spices and throw it all together.

Simple today.
