When Nostalgia hits you hard & Cubism stir fry w/Soy-yogurt


Nostalgia. Isn't it beautiful? When we romanticize our past beyond repair and fall in this state of mourning our childhood to a point where we don't really want to be in our present anymore.
Ironically the best thing to do in these situations, in my humble opinion, is romanticize our present. Use all of your senses and create the moment that you are yearning. Food has always been a huge part of my life. I connect all of my fondest memories with the smell of things, so obviously smelling waffles on the streets reminds me of the ones my mum used to make, and smelling the forest reminds me of all the times we went out to gather mushrooms. This recipe is not something I particularly connect with my childhood, but as I am writing this I am, once again, hit by the ghost of my past.

As autumn begins I am reliving everything I once loved about my life. This is getting super depressing, I am sorry haha, I am not depressed. I am just addicted to memories. And when the memories you have are too painful, it might just be easier to create new ones.
So unplug yourself, turn everything off, and live in this current moment, because these are the moments you will one day crave.

Over the next weeks/months my blog will be the host for many recipes from my youth, and fall-themed recipes, just like last year.
Now breathe in the autumnal air and go eat some cinnamon... Or this stir-fry.

Ingredients:

1/3 red bell pepper
1/3 Zucchini
1/2 Eggplant
1/2 red onion

2 thick slices of a big sweet potato
1 clove of garlic
1-2 tsp of coconut oil (or more)
Salt (herb-infused is important) & pepper

& Unsweetened Soy-yogurt

The key to this stir-fry is to cube everything as small as you can, especially the sweet potato since its not cooked before we dump it in the pan.
Just throw everything except the garlic in the pan with some coconut oil, and when its almost done add the garlic.
Add salt and pepper & a splash of soy yogurt (or regular yogurt if you are not a vegan).
