A summer salad incase you live in L.A


Summer is over. At least here in Berlin. Don't get me wrong I love autumn and all the themed recipes I could be posting and enjoying, but the fact that I still can't eat sugar (including fruit. kill me now) or gluten kind of puts a damper on things. Oh well... there will be a fall next year (but really, im pissed). This salad was a staple during this summer. Its so fresh and creamy and perfect. I don't know why my sentences are so short today. Am I Lydia Davis? I don't know.
I live in Neukölln, which is kind of like the cool people neighborhood of Berlin. Kind of like Bushwick "The new Williamsburg" (yeah whatever). Anyway, I only live about 15 minutes away from the turkish farmers market, where I purchased all these ingredients fresh off the fields in... well, who are we kidding, probably, definitely not Turkey. So before I say more confusing, grumpy, Saturday morning stuff that has nothing to do with this recipe I will tell you how I made it.

Ingredients:
1/2 cup of dry Quinoa

1/2 cucumber
3-5 dried tomatos
1-2 big vine tomatos
fresh mint (however much your heart desires)
salt & pepper


Dressing: 
1 tsp tahin
1 tsp peanut butter
1 tbsp olive oil
1 tbsp white wine vinegar

So you cook the Quinoa with 2-3x more water than its mass, so about 1-1/2 cups. Watch it closely though, because it always depends on your stove and the heat. Cube the cucumber and tomato, and slice the dried tomato. Once the Quinoa is done, let it cool down and then mix in the vegetables (or fruits if you're a botanical nazi). Then pluck your little bunch of fresh mint, really one of the key ingredients, and salt & pepper all over that shit.

Mix the dressing and pour it over.
