Have yourself a Merry Little Christmas & some Pasta



Hey everybody! So the last half of this year hasn't been very blogger potent from my part, but part of my New Years resolution is definitely to make a post at least twice a month. I am spending my Christmas on Mallorca in Spain. I will always be an island girl at heart & reconnecting with my roots has been so healing for me, as well as the sun... and the sea... and the food. Having the time of my life to be honest. So today is Christmas day for us Germans, and my dad and I went for a run by the ocean & for a little walk through the old city of Palma. I will admit that this is not what we ate today. I made this earlier this month, but I think its a nice little post for the festivities, since its a quite rustic and festive dish. A little Italian spirit, but perfect for anybody who wants to ditch the meat this Christmas, or maybe for the New Year?

Ingredients:
Pasta of your choice (I chose GF/rice spaghetti)
1-2 cups dark champignons or porcini mushrooms
1/2 onion
1 handful of fresh spinach
1 cloves of garlic
1 tbsp balsamic cream
1/2 tbsp of pumpkin seed oil 
1/2 tbsp of maple syrup
1-2 tsp of olive oil for cooking 
a tiny bit of soy cream
fresh ground pepper & sea salt
a little chili 
some basil to garnish 

Chop of your onion and your mushrooms and roast them in some oil or veggie broth if you avoid fats (although the pumpkin seed oil is quite essential for the flavor of this dish). Roast them plenty, so you get a little smoky taste. Add the spinach, the garlic and a tablespoon of balsamic glaze when its almost cooked and then add a little dash of cream and some chili. Serve on top of a pasta of your choice and drizzle with a mix of pumpkin seed oil and maple syrup as well as some fresh ground pepper and salt.
