Fennel orange salad with maple mustard curry dressing

I cannot put into words how happy I am about the weather change here in Berlin. Winter was far too fucking long and I couldn't be happier that I was able to eat this meal on our balcony. This insanely delicious salad, plus the sun, made my day.


1 fennel

1 orange
1/2 avocado
1-2 springs of mint
1/4 cup of parsnip
1 tablespoon ginger
2-3 pieced walnuts
1/2 teaspoon black sesame


2 tablespoon maple syrup
1-2 teaspoons mustard
1 teaspoon hummus (optional) 
1 teaspoon lemon
1/2 teaspoon curry powder
Balsamic glaze & crushed pepper as garnish

You slice the fennel and parsnip thinly, cube the avocado and the orange & mix it all together with crushed ginger, walnuts and the mint leaves. Then you mix in the dressing and the sesame seeds and serve it garnished with balsamic glaze and crushed pepper.
In my opinion the slightly salty flavor of the fennel makes adding salt redundant, but you can't go wrong with a small dash of soy sauce in the dressing if you like it saltier.
