Simple & Minimalist Asian Rice noodle Bowl

Hey Mindfoodists,
Todays recipe could not be simpler, but I really loved this combo so I have to share.
Its so fresh and minimalist, great for a hot summer day where you still want something with substance. It is also an amazing example of what you can create when you are using up left overs from your fridge and pantry. As always an asian flair to it despite my completely asian-free bloodline.
Anyway, I hope you enjoy.

Ingredients (for 2 people):

2 portions of rice noodles.
6 radishes
1 cucumber
1/2 avocado
1 lime
Soy Sauce
Lemon grass paste
Black sesame

1. Cook the pasta according to Instructions, which is usually 2-3 minutes in boiling water.

2. Mandolin your radishes and cucumber into thin slices.

3. Mash half an avocado.

4. Divide the pasta onto two plates and add the veggies half/half, as well as the avocado.

5. Mix Soy Sauce, Agave and the juice of one lime together with a little lemon gras paste and pour it over.

6. Add the Black Sesame & Serve :)
