Creamy Avocado Dressing


Hey Mindfoodists,
I write this as I am rematching American Beauty, Kevin Spacey is currently jerking off in the garage. If you haven't seen that movie go watch it nowIts one of my favourites.

I want to dedicate more time and effort into blogposts this year. Since I was travelling a ton these last months (and still sort of am) I barely get chances to photograph my meals or cook unique exciting things.
This, as so many others of the recents, is an older picture. I would even call it vintage since it stems from my New York time, and you would think I wouldn't remember this recipe, after all its been a long time, but this Avocado dressing is life and that wasn't the only time I used it to turn my salads into highlights of my day. In the following paragraphs I will tell you all the secret ingredients and explain how I made it. I hope you enjoy, and thank you for your patience, I promise exciting dishes are coming.

Ingredients:


1 ripe avocado

1-2 cups of organic basil
1 clove of garlic
Juice of 1-2 lemons
1/2 teaspoon of salt
*optional add in: Cilantro - Makes it into a complete different type of dressing that I would recommend for any recipe that has a little Mexican touch to it, such as these two salads that you can find here:

I know I said I would explain how to make it, but I think its pretty self-explanatory. Just blend it up.
It might seem simple, but its my favourite dressing so you have to try it.
