Salted Coconut Cocoa cookies (V+GF)

Hello beauties,

Todays recipe is a healthy gluten free, processed sugar free, nut free, vegan *gasp* cookie recipe.
Its delicious and great for breakfast with a decaf coffee or matcha latte. Amazing on the go, filling satisfying blabla all that. So without further a do:

1 tablespoon chia + 3 tablespoons water
1/4 cup coconut oil
1/3 cup maple syrup
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon sea salt
1/3 cup coconut chips
3 tablespoons cocoa powder
1 cup gluten free oat flour (you can make it yourself in the blender or food processor)
1/2 cup fluten free oats

Preheat the oven to 180 degrees celsius.

This recipe is very similar to my granola recipe which is coming soon.
The only difference is the “chia egg”, which basically acts as a binder

So blend your oats if you haven’t already and add baking powder, baking soda, sea salt and cocoa powder. Then in a separate bowl mix the maple syrup with the vanilla extract, and the melted coconut oil and whisk in the chia egg till frothy. Then mix both bowls together and add the coconut chips.

For me everything is quite intuitive, so if you feel like you would add more or less cocoa powder, more maple syrup or coconut chips go ahead and do so! Everybody has different tastes and preferences, so adjust as you go along. If you are not worried about gluten you don’t have to use gluten free oats which can be hard to come by, or even use regular flour, it won’t make much of a difference.

Form balls and then press them down onto a baking sheet. 
Like so:
Leave them in for around 10-15 minutes or until golden, since it always depends on your stove and the size of your cookies. Let them cool on the baking sheet for up to 10 minutes (8 if you’re super impatient). The cooling down basically ensured that your cookies don’t fall apart (which they very well could because egg free recipes sometimes fail purely because the universe is fucking with you).
