The Perfect Bircher Muesli

Welcome again,
As promised I have two posts for you this week to make up for my short disappearance.
Today I present you one of my favourite breakfast recipes ever. Bircher Muesli, I believe of German origin is filling easy and much healthier than most breakfast options. This is my version of it. gluten and sugar free as well as infused with superfoods. My favourite thing about this recipe is its richness in Omegas thanks to the flaxseed oil. If you are worried about fat you can obviously leave that out, but for me it makes the recipe and I find I feel so great after eating this (and my skin looks it).

1/2 cup of oats 
+ 1/4 cup of oats
1/2 cup of rice milk (any plant based milk works)
1/2 cup of gluten free flakes (unsweetened corn flakes work)
1/3 cup of soy yogurt (any plant based yogurt works)
1/4 cup of crushed walnuts
1/4 cup of goji berries
2 tbsp flaxseed meal (or flaxseeds)
1 tbsp of chia seeds
1 apple
1/2 banana
8 large strawberries
1 teaspoon of flaxseed oil (per portion to top of)
1 teaspoon of maple syrup of honey (per portion to top of)

1) Cook half a cup of oats in rice milk and set aside. 
2) Shred the apple and mix it into the oats.
3) Add the corn flakes and the yogurt.
4) Add rest of the dry oats.
5) Add the flaxseed meal the chia seeds and the goji berries.
6) Chop the banana and the strawberries and add them in. You could also add other fruit like pear, kiwi, orange or bircher classics.
7) Sweeten the whole thing, or sweeten as topping when you serve. Drizzle the oil on it and ass some fruit to make it look pretty and voila.
